I don't know what it is with me and meats, but I can only handle certain ones. My stomach just goes nuts. That perfect homemade BBQ sauce I made last week was a big hit in my house. I made pork ribs for a freelance project.

Of course, the guy was in heaven because there was no way I would be caught dead eating those. I was secretly dying in side because ribs equals touching bones and I just get queasy when it comes to that. Somehow I made it through without freaking out. Slathering BBQ sauce on them helped greatly.

  • 1.25 lbs boneless skinless chicken breasts
  • 1/4 cup low sodium chicken broth
  • 1 cup low sugar BBQ sauce
  1. Place all ingredients in a crockpot.

  2. Cook on low 6-8 hours or 3-4 hours on high.

  3. Break apart the meat with a wooden spoon or two forks to shred in the crockpot.

  4. Serve immediately over a gluten free bun or on a salad. Instant Pot version is here.
